Kung Pao Kitchen. Having already anchored itself as the leader in the segment -- with 13 locations open and operating throughout the United States and an additional 29 restaurants in various stages of development -- Mama Fu's is targeting the local marketplace as part of a broader strategy calling for at least 10 additional units nationwide through 2012 and expanding the concept to 150 units in the following years. Company plans call for two restaurants in Tulsa in the next few years.
Differentiating itself from other concepts in the fast-casual Asian segment, Mama Fu's recently evolved its concept by introducing a new, smaller prototype that reduces building costs by over 10 percent. This improvement came on the heels of a complete brand overhaul that included a 20 percent start-up cost reduction, implementation of a delivery service and a "flex-casual" in-store service model that features counter ordering during lunch and full service at dinner.
To augment the company's growth, Mama Fu's is seeking multi-unit franchisees with previous experience in restaurant operations. With a franchise fee of $28,000, the overall investment is approximately $550,000 for a 2,500 square foot restaurant that seats 80-85 guests. This does not include tenant improvement allowance or other landlord credits.
